'MasterChef Australia 2011' winner Kate Bracks The humble mum from a rural town talks about her 'MasterChef' victory and sudden fame.

'MasterChef' winner Kate Bracks celebrates with runner-up, Michael Weldon.


It was creating a delicious snowman dessert from the world's best restaurant, Noma in Copenhagen, that changed Kate Bracks’ life.


The 36-year-old mother-of-three from the New South Wales town of Orange pulled off the complex recipe to beat co-contestant Michael Weldon by five points and claim the "MasterChef Australia 2011" title on Sunday.


Her newfound fame is a long way from her life in rural Orange, a few hours drive west of Sydney.


While enjoying her celebrity status, this humble winner just can’t seem to absorb her achievement.


As she gets used to all the fuss, she can look forward to a grand prize that includes $100,000, her own cookbook deal and work experience opportunities in some of Australia's top restaurants.


We spoke to her about being the new face of cooking, her future plans and her love of Vegemite.


CNNGo: You’ve been ‘MasterChef’ for a couple of hours now, what has changed?


Bracks: I feel like I’m floating on the clouds and waiting for my feet to hit the ground. It hasn’t happened yet. The biggest change is that I haven’t got off the phone since. But mainly, the opportunities that have opened up for me as opposed to what it would have been if I had been eliminated a few weeks ago. It’s a very different field that I’m entering into and it’s exciting. Let’s say it’s an end of one chapter and starting to a whole new book.


CNNGo: Before 'MasterChef', what did cooking mean to you?


Bracks: Cooking was a way that I relaxed and unwound. When I came home from a stressful day, I used to bake. Baking was my first love and my husband knows that. We moved to Orange about five years ago, which is three hours away from Sydney and a big foodie town. It was a whole new world of flavors and fresh produce that had opened up for me. The town helped me explore my creativity and kindle my love for food.


CNNGo: What does food mean to you now?


Bracks: I experiment with food more. A lot of my friends tell me, ‘Oh, you must be sick of cooking now.' But I love it even more now. 'MasterChef' has enhanced my passion for it. I haven’t cooked since winning the title, and I’m already missing it.


CNNGo: 'MasterChef' has made cooking more commercial, as opposed to being just a household chore. Do you think cooking has gained novelty?


Bracks: People are much more aware of what they’re eating and what they’re cooking. It’s very easy to get lazy about what we put into our bodies. But I love how shows like 'MasterChef' have raised people’s awareness of what they’re eating. Everyone makes 'MasterChef' jokes at home and pretends to be one, and I think that’s only a good thing. The plates at home look much prettier now, even if it’s a simple dish.


CNNGo: In the show, you cooked under the mentorship of international chefs and then traveled to Malaysia and New York. How did those adventures change you as a cook?


Bracks: They were incredible experiences. It opened up my world to more ideas and a whole new culture. I had never been to Malaysia or New York before, so those opportunities just expanded my horizon. I profiled different flavors, skills and techniques and then used them all in my cooking.


CNNGo: Did you ever dream of being the most watched person in the country, especially after the popularity of reality shows like 'Big Brother' and 'Australian Idol'?


Bracks: Not at all. I have never been a big television watcher, so I never understood the entire hype of reality TV. Even now, I feel like I’m exactly the same person but the difference is that a lot of people know me. It’s a strange feeling that hasn’t sunk in yet.


CNNGo: 'MasterChef' contestants are always so emotionally charged. Is food really that stimulating?


Bracks: What you don’t see on TV are the long hours that people put in. The days are much, much longer than they look. We’re talking 14-hour days. Yes, it looks very emotional, but there’s a lot more going on than what’s shown in that broadcasted hour. They are so passionate about food and they want it so perfect that sometimes crying is the best way to deal with it.


CNNGo: Does Vegemite on toast still hold a special place in your heart?


Bracks: Of course. If Australia’s 'MasterChef' doesn’t crave Vegemite, then something’s wrong.


CNNGo: How do you see the Australian food industry progressing?


Bracks: It will continue to grow. Australia’s produce is so dynamic, it’s constantly changing and new ingredients are coming in the market. Even the chefs that I’ve had exposure to over the last few months are awestruck by this country’s culinary potential. It’s exciting for me because everything is growing and I have so much to play with.

CNNGo: What’s next for you?


Bracks: The road to my cookbook. It’s part of the prize and number one on my agenda. The time restraints are on and there are lots of deadlines to meet.


CNNGo: What’s happening with your dream of opening a gourmet bed-and-breakfast?


Bracks: With the extra commitments I have as a winner, that dream is pushed back, but only a little bit. But definitely, my husband Luke and I will be investigating that in a little bit more detail to see if we can make it happen. My idea is to have a tiny hotel with small cottages near my hometown that serves gourmet food around a communal table.

Nama dish Snowman,Carrot Shorbet...dessert.

Carrot Shorbet kena di nitrogen...dan terlalu banyak teknik.Terlalu banyak element dalam satu dish.

Selalu kita dengar tentang Michelin Star Chef dan Michelin Star Restaurant,nak tau macamana sejarah dan ratingnya dibuat.
Rating ni amat penting untuk seseorang Chef dan juga restaurant.

Sejarahnya:

What are Michelin Stars ?

Michelin Stars are awarded for food excellence in restaurants. Today they are considered to be highly coveted awards by many chefs in Europe, although accusations of bias leads some chefs, especially outside of Europe, to turn their noses up at them.

How did Michelin Stars Start?

When did Michelin Stars Start?

Michelin stars are a feature of the Michelin Guide books which were first published in France by Andre Michelin, the then co-owner of the Michelin Tyre Company. In 1900 the first Michelin Guide listed a wealth of information for motorists which included where to find meals and accommodation and was aimed at touring motorists on holiday in France.

However, by 1920, the dining part had become so popular that Michelin set up a team of inspectors who would anonymously visit restaurants and rate them on a 3-category basis, now known as Michelin Stars for restaurants outside of Paris.

This new three-category classification system was soon extended to Paris and by the 1933 edition, 23 restaurants in France were rated with three stars. It was further extended to cover other European countries and although the system was dropped for a while, the 1951 edition saw the return of the three-star rating system, but with fewer restaurants achieving maximum stars.

Today, Michelin Stars are awarded sparingly to a small number of restaurants of outstanding quality. For instance in the UK and Ireland 2004 guide only 3 restaurants were awarded three stars. They are also now closely linked with the chefs of those establishments which is why you sometimes hear a chef being referred to as a "Michelin Star Chef".

What do Michelin Star Ratings Mean

There are three levels of star ratings which can be awarded to establishments from 1 star to 3 stars.

3 stars "Exceptional cuisine, worth a special journey"
2 stars "Excellent cooking, worth a detour"
1 star "A very good restaurant in its category"

There is also an additional fourth category- “Bib Gourmand”. This is named after The Michelin Man whose name is Bibendum. These restaurants are usually rated solely on the scale of "forks and knives". The forks and knives rating is given to all restaurants recognized in the guide, and range from one to five. One fork and knife being "Quite comfortable restaurant" and five being "Luxurious restaurant".


How are Restaurants Assessed for Michelin Stars

As in the past, Michelin employ inspectors to anonymously visit and evaluate establishments. Their aim is to pick out consistently high-quality establishments across a range of cuisines, styles and budgets. Restaurants are rated in five categories:

Quality of the products
Mastery of flavour and cooking
The "personality" of the cuisine
Value for the money
Consistency between visits

Despite their fame, there are still many people today, both professional and non-professional cooks, who believe Michelin Stars to be meaningless, especially in the way they are awarded i.e. by individuals giving their personal opinions which can't help but be based on their personal likes and dislikes. After all, to keep the culinary theme, one man's meat is another man's poison.

Siapa kata menangis tidak ada faedahnya? menangis terlalu lama boleh membuatkan ...mata merah dan bengkak. Tapi , menangis dan mengeluarkan air mata boleh menjadi ubat ajaib yang berguna bagi kesihatan tubuh dan fikiran. Apakah keajaiban itu?

1. Membantu penglihatan
Air mata terbukti membantu penglihatan seseorang, jadi bukan hanya mata itu sendiri. Cairan yang keluar dari mata dapat mencegah dehidrasi pada membran mata yang boleh membuat penglihatan menjadi kabur.


2. Membunuh bakteria
Tak perlu ubat eye drop tu, cukup air mata yang berfungsi sebagai antibakteria secara semulajadi. Tapi jangan salah faham, keluarnya air mata yang beracun itu menandakan bahawa ia membawa racun dari dalam tubuh dan mengeluarkannya melalui mata.

5. Mengurangkan stress
Macam mana menangis boleh mengurangkan stress? Air mata dikatakan mengeluarkan hormon stress yang terdapat dalam tubuh iaitu endorphin leucine-enkaphalin dan prolactin. Selain menurunkan level stress, air mata juga membantu melawan penyakit-penyakit yang disebabkan oleh stress seperti tekanan darah tinggi.

6. Mengeratkan hubungan silaturahim
Selain baik untuk kesihatan fizikal, menangis juga boleh membantu seseorang mengeratkan silaturahim antara kawan-kawan. Biasanya seseorang yang menangis setelah menceritakan masalahnya di depan kawan-kawannya atau seseorang yang boleh memberikan sokongan, dan seterusnya meningkatkan kemampuan berkomunikasi dan juga bersosialisasi.

7. Me’rileks’kan perasaan/diri

Inspirasi daun kesom bunga kantan

PETALING JAYA: Penang's famed assam laksa is one of the dishes worth traversing the world for, according to a CNN International food survey.

Under its CNNGo guide to lifestyle, shopping, hotels and restaurants, Malaysia's popular dish is also seventh among the world's 50 most delicious food.

CNNGo describes the dish as “poached, flaked mackerel, tamarind, chili, mint, lemongrass, onion, pineapple an addictive spicy-sour fish broth with noodles.”

It added that the Penang assam laksa was especially great when fused with ginger “that'll have your nose running before the spoon even hits your lips.”

Mouth-watering: Assam laksa is seventh among the world’s 50 most delicious food.

Unfortunately, however, the dish is the only one from Malaysia that is listed among the great foods of the world although the country is known as a food heaven.

Thailand, which tops the bill with its massaman curry a spicy, coconut-flavoured, sweet and savoury curry that is described as having “more personality than a Thai election” has also three other favourites in the list: tom yum goong (no 8), nam tok moo (no 19) and som tam (no 46).

CNNGo said the The Land of Smiles isn't just a marketing catch-line. It's a result of being born in a land where the world's most delicious food is sold on nearly every street corner.

Penang assam laksa, however, outdid other world famous food like Shepherd's pie from Britain, French croissant, pho from Vietnam and Iranian kebab.

Singapore got two placings with its chili crab (no 35) and chicken rice (no 45), although the two dishes are often on Malaysian menus as well.

Other dishes familiar to Malaysians, including Hong Kong's French toast, Italian lasagna and rendang from Indonesia are also on the list.

A bizarre food on the list is stinky tofu, which is placed at no 41, and described as “the most iconic food in South-East Asia, just like durian.”

“The odour of fermenting tofu is so overpowering, many aren't able to shake off the memory for months.

“So is the legendarily divine taste really worth the effort? Sure it is,” added CNNGo.
